This public wine tasting in Makati, Manila to be held in the Ayala Heritage Library in Makai on Saturday 17th November, 2012 is another rather special event.

This event is a wine tasting seminar dedicated to the pursuit of knowledge and experience in the art and science of pairing wine with food. Although the pairing of food and wine is subjective and personal in nature, there are however fundamental principles that can serve as useful guidelines for sommeliers as well as food and wine lovers looking for ideas on how to select the right kind of wines to enjoy with certain a certain dish.

The dynamics of food and wine pairing will be discussed over a 30-minute seminar. This is not a full-length seminar. Knowledge of techniques as well as palate dynamics is not required for participants to enjoy this event. The seminar is intended to go through the fundamental principles of food-wine pairing as well as some useful guidelines to follow when selecting wines to pair up with food.

This is then followed by tasting of various kinds of food-wine pairings. The tasting is designed to illustrate the principles at work in real-life matchups of wines with different kinds of food.

Five flights of food-wine pairings are served during the course of this event to illustrate the different basic strategies and principles of food-wine pairing.

For this event, we have selected as venue, the cozy but small Tower Room of Ayala Heritage Library at the Ayala Triangle in Makati, Manila. It is our intention to keep the participation small – up to 16 persons only – so we can have more interactions and plenty of opportunities to share ideas and ask questions too.

Please note that this is not a wine dinner. Being a tasting the food portion is purposely kept small. Pouring size of the wine will be the usual 60ml. The event will start promptly at 4:30pm and ends also promptly, at 6:30pm. Participants are asked to be punctual.

Caesar Salad
1999 Chablis 1er Cru Vaillons, Lamblin et Fils

It is a shame that wines are often missing on the table when a good salad is served. Admittedly vegetables are not a wine’s strongest ally but it also doesn’t mean the two should go their separate ways either. For more intense salads such as the ever-popular Caesar, the wine is not matched up against the green (Romaine lettuce in this case) but the rich and savory dressing. This medium-age Chablis is chosen for only for its vigor and lemony nose but also for its fresh acidity to ignite a synergy when it meets the Anchovy at the base. What one must avoid in the wine for this pairing is oak flavors. That would ignite something rather unpleasant on both sides.

Mixed Liver Pate served on Toast
1977 Eiswein, Niederthaler Germany

Three aspects are being introduced to each other with this pairing. First we start with the texture. A slightly coarse mixed-liver patè is chosen. The grainy texture of the food makes the wine feel a little bit more velvety on the palate. The high percentage of fat in the food makes the palate feel awfully tired and sleepy. Sweet wines are among the most acidic of all forms of wines. The acidity of this Ice Wine is called upon to cut through the fat in the liver making it feel a bit lighter. Lastly this old vintage Eiswein last shed some of its youthful unctuous sweetness. Its medium-intensity sweetness prevents the wine from cloying our appetite.

California Maki
2011 Traminer, Durnbert Altes Kreuz, Austria

Sake and Sapporo draught are probably the classic choice for just about all kinds of Japanese cuisine but just in case we really want only wine on the table or in the picnic basket, the safe play is a fruity white wine. Not just any white wine because flavor matching isn’t the only challenge in this game. Weight is something that is far too often overlooked in a match-up. This Traminer from Austria is no featherweight. Once the flavors agree, this pairing is really about matching up pound for pound. Other good wine options include Cote-du-Rhone Blanc and maybe a good Rias-Baixas.

Grilled Salmon
1990 Corton Marechaudes, Grand Cru, Prince Florent de Merode

The doctrine “Red wine with meat and White wine with fish” is about to be thrown out the window. Be that as it may, pairing red wine with seafood is still tricky business. The culprit here is iodine and some fish are just oozing with it. Those fish would reap havoc in the presence of red wine. Luckily Salmon isn’t one of those. Salmon is rich and savory but it is still a fish so a heavy red wine will overpower the food. Too much presence of tannin in the wine will ruin everything with any fish but acidity is welcome as it is required to “cut” the richness of the Salmon otherwise the combination will feel flat and flabby. This Grand Cru red wine from Burgundy’s famed Corton commune has reached an age where the astringency of youth has mostly been shed, leaving with us a smooth elegant and complex Pinot Noir that not only matches the flavors but more importantly the weight of the Salmon.

If it is just one single cheese on the platter, a Cropwell English Blue Stilton for example, then one can be rather bold and reckless with the choice of Port. But when there are several kinds of blue cheese on the board, I would be more conservative and go with a port that is less tannic, not so cloying and with not so much chocolate flavors. This Imperial Rouge from Daniel Sanders provides the right combination of sweetness, structure and acidity. It may not be the perfect match for any particular cheese in front of us but it brings more out of all the cheese when enjoyed together. This is another good example of how contrasting the wine and the food could somehow result in perfect harmony.

World leaders meet on disaster management in Japan

SENDAI, Japan — Politicians and aid officials will gather in Japan’s quake- and tsunami-hit northeast Tuesday to discuss what lessons can be learned from disasters.
Pre-emptive measures to reduce damage — and save lives — when nature strikes will be top of the agenda at this two-day conference, part of the annual meetings of the International Monetary Fund and the World Bank.
Organisers picked Sendai as the capital of a region that lost nearly 19,000 people when the massive waves of March 2011 rolled ashore, crushing whole communities.
Kazushige Taniguchi, the World Bank’s special representative to Japan said delegates would “share and learn from Japan’s experience in last year’s quake and tsunami disaster”.
“Lots of developing countries are today rapidly putting up infrastructure without paying enough attention to disaster prevention.
“We aim to make it standard to incorporate disaster prevention into the planning of development aid,” he told reporters ahead of the meeting.
On Wednesday, IMF managing director Christine Lagarde and World Bank president Jim Yong Kim will visit disaster-hit areas before wrapping up the two-day conference.
The Sendai talks are expected to feed into the communique to be issued on Saturday at the meeting of the Development Committee, the highest Fund and Bank joint decision-making body, Taniguchi said.
Last week, Japan and the World Bank released a joint study aimed at sharing experience from last year, when a 9.0-magnitude quake and resulting tsunami crushed the coast and triggered the worst nuclear crisis in a generation.
The study, comprising 32 “knowledge notes” on disaster risk management and post-disaster reconstruction, will be used as a basis of discussions in Sendai.
“We hope aid practitioners will find the knowledge notes useful, as they include some novel findings such as importance of education that would percolate into people’s behaviour,” said Taniguchi.
They also talk about the importance of paying attention to supply chains, a key lesson from Japan’s disaster where global industries like automotive were crippled when a key parts production line was knocked out.
Education, the distribution of hazard maps and the issuance of early warnings as well as the importance of reinforcing key buildings also feature.
The report notes the usefulness of social media for search, rescue and fundraising, and the importance of constructing temporary housing and maintaining existing sources of income in the recovery phase.
Many of these notes are still challenges for Japan, where 329,000 people are still living in temporary homes, nearly 19 months on.
The government plans to build new houses in upland areas and to offer cash handouts to partially finance housing loans.
The disaster left 18,684 people dead or missing and sparked reactor meltdowns at the Fukushima nuclear power plant on the coast, figures from the National Police Agency showed.
Of those, 2,814 people remain unaccounted for.

Prelate fears premature campaigning

A CATHOLIC prelate expressed anxiety over possible premature campaigning after thousands of residents trooped to the St. Augustine Cathedral and later marched toward the Commission on Elections (Comelec) to show support to incumbent Cagayan de Oro City Mayor Vicente Emano in filing his certificate of candidacy (COC) last Friday.

Abacahin celebrated the mass for the United Nationalist Alliance (UNA) at the St. Augustine Cathedral with Emano, his team and Vice President Jejomar Binay.
Abacahin said he is stunned upon seeing more than 20,000 people inside and outside the cathedral.
“We hope there is no violation of the Omnibus Election Code and that there is no premature campaigning when supporters came and show their support,” he said.
Abacahin said the idea of change and renewal must come from the passion of politicians in really helping and serving the people.
He also urged the people to reflect before exercising the rights to suffrage.
“We hope it is an opportune time for the people to reflect on these candidates if they are pro-life, pro-environment and pro-God,” Abacahin said.
The supporters, who came from different villages of the city, joined the mass and marched with Emano towards the Comelec but reports said they just came as “ordered.”
A copy of Memorandum 17-2012 dated October 4 signed by Cugman village chief Ricardo Pacheco obtained by Sun.Star Cagayan de Oro stated that barangay council members, employees, barangay health workers, collectors, barangay nutrition scholars and village watchmen “are directed to attend and support the activity ‘Emano for Mayor’ and that “attendance will be checked.”
However, Section 93 of Republic Act 7160 or the Local Government Code stated that local officials are prohibited from engaging directly or indirectly in any partisan political activity including using his authority to influence his constituents.
“No local official or employee in the career civil service shall engage directly or indirectly in any partisan political activity or take part in any election, initiative, referendum, plebiscite, or recall, except to vote, nor shall he use his official authority or influence to cause the performance of any political activity by any person or body,” the law says.
“However, he may express his views on current issues, or mention the names of certain candidates for public office whom he supports. Elective local officials may take part in partisan political and electoral activities, but it shall be unlawful for them to solicit contributions from their subordinates or subject these subordinates to any of the prohibited acts under the Omnibus Election Code,” it added.
But Emano, during his weekend radio program, denied accusations that he compelled village officials to be present on Friday.
“Wala gayud nako pugsa ang mga kapitan ug mga tawo pagtambong. Gani, kadtong nakuha nga memorandum sa Barangay Cugman, dili man ang kapitan ang nagpirma,” he said.
Emano said the propaganda was an insult to the people who supported him when he filed his COC.
He said 76 out of the city’s 80 barangays joined him and his team on Friday.
“Upat lang ka kapitan ang wala niuban atong panahona pero adunay mga tawo sa ilang barangay nga niduyog,” Emano added.

Legarda wants cyberlaw amended, libel decriminalized

MANILA, Philippines – Senator Loren Legarda has filed bills to amend Republic Act No. 10175, or the Cybercrime Prevention Act of 2012, and have libel decriminalized.
Legarda, in a press statement, said the libel and takedown provisions of RA 10175 must be removed.
“In seeking repeal of the two clauses through Senate Bill 3295, I hope to eliminate the chilling effect that may impose undue boundaries on our people’s exercise of freedom of expression,” she said.
“Consistent with the Constitutional mandate of promoting free expression, it is imperative for institutions such as the legislative branch of government to adopt a policy towards the proliferation of a free market of ideas,” she said.
Legarda was among 13 senators who approved the upper House’s version of the cybercrime law bill authored by Senator Edgardo Angara.
She said there is a need to balance the government’s role to protect its citizenry and uphold freedom of expression.
Legarda said Senate Bill 3294 also aims to decriminalize libel by removing the penalty of fine and imprisonment in libel cases.
“While the Bill of Rights of the 1987 Constitution guarantees the freedom of speech, experience has shown us that such is easily stifled with the mere threat of criminal libel,” she said.
“Apart from threatening our citizenry’s long-cherished Constitutionally-guaranteed freedom, the continued criminalization of libel will be a huge hindrance in efforts aimed at promoting good governance and exacting accountability on our public officials,” she added.

United Nations – UN Secretary General Ban Ki-moon Monday praised the recent peace accord ending a decades-long Muslim separatist insurgency that killed 150,000 people, offering UN aid “as needed.”
The agreement would see the establishment of a new semi-autonomous Muslim area in the resource-rich southern Philippine region of Mindanao, which the 12,000-strong Moro Islamic Liberation Front regards as its ancestral homeland.
Ban commended “President Benigno Aquino for his vision and courage, as well as the commitment of the MILF leadership, in reaching this landmark achievement,” according to a UN statement.
The secretary general expressed “his heartfelt wishes for peace and prosperity to the government and the people of the Philippines,” and in particular the people in the new semi-autonomous region, called Bangsamoro.
Mindanao served as a base for the MILF, the biggest and most important remaining rebel group, after the Moro National Liberation Front signed a peace pact with the government in 1996.
It is one of the most fertile and resource-rich parts in the archipelago — but decades of violence and unrest have left it into one of the poorest regions of the Philippines.
The rebellion, which began in 1978, has left 150,000 people dead and displaced hundreds of thousands more.

PDEA chief debunks death rumor

MANILA, Philippines – The chief of the Philippine Drug Enforcement Agency (PDEA) has dismissed text rumors that he is already dead.
“I am very much alive and strong,” PDEA Director General Jose S. Gutierrez Jr. said in a statement.
Gutierrez said the hoax was deliberately done in order to add more fuel to the controversies hounding the agency.
“This is not new to me. I have gone through the edge of death and barely survived. But this time, my supposed ‘death’ was made with malicious intent to mislead everyone,” said Gutierrez, who is a cancer survivor.
He also denied reports that a near shootout happened inside his office involving members of PDEA Special Enforcement Service (SES) and PDEA agents linked to the alleged P8 million extortion case.

Gutierrez said that some underhanded efforts were obviously behind these rumors purportedly as an attempt to launch a smear campaign against him and destroy PDEA as an institution.
A Palace source earlier told ABS-CBN News that President Aquino is now looking for a possible replacement for Gutierrez from a shortlist. This is amidst the controversies hounding Gutierrez and his wife and the extortion issue in PDEA.
The source said Aquino is worried the PDEA might be sidetracked from its mandate by the involvement of some agents in illegal activities.
The source added the President is also taking into consideration Gutierrez’s deteriorating health condition.
Ex-PDEA deputy chief Carlos Gadapan earlier accused Gutierrez of signing off on an P8 million extortion attempt against a Chinese drug suspect. The suspect, Mark Sy Tan, later confirmed the extortion attempt but denied that he paid any money.
A witness interviewed by ABS-CBN, however, confirmed the extortion, saying the money was coursed through her account.
Gadapan also accused Gutierrez of recommending his firing after he revealed Gutierrez’s wife had a gambling problem.

2 dead in Pampanga robbery

CAMP OLIVAS, Pampanga, Philippines – At least seven unidentified armed men shot dead the owner and security guard of a house they robbed in Barangay San Rafael, Mexico on Sunday.
In a report here, Senior Superintendent R’Win Pagkalinawan, Pampanga police officer-in-charge, identified the victims as Celestino Bautista, 41, a businessman and Jesus San Antonio, 27, duty guard.
Pagkalinawan said the armed men immediately shot the two victims upon entering the house.
The robbers carted P20,000 in cash and an undetermined amount of jewelry.
Pagkalinawan ordered a manhunt for the suspects.
