CLARK FREEPORT — A top executive of the Cathay Pacific said the airline’s sister firm Dragonair, which launched its daily Clark-Hong Kong flights Tuesday, said they will connect Clark to the world.
Wilson Yam, general manager of Cathay Pacific for South East Asia, made the announcement during a dinner with Clark officials, travel agents, mediamen, and other stakeholders Monday night at the Holiday Inn Hotel here.
“We are committed to the Filipino people and we are working hard to connect Clark to the world,” Yam said.
Yam and Clark International Airport Corporation President Victor Jose I. Luciano sent off Dragonair’s maiden flight to Hong Kong, with a Boeing 737 aircraft which carried some 152 passengers.Yam said they are very happy about the good treatment and accommodation of Clark airport officials. He thanked Luciano and Clark Development Corporation acting officer in charge Eduardo Oban.Luciano welcomed the airline, saying it will help in serving residents in the airport’s catchment area in the northern parts of Metro Manila and the most part of Central and Northern Luzon.Luciano earlier said Clark will have another global reach with Dragonair, Cathay Pacific, in choosing the airport.
“We are now connected to the four corners of the globe with the 150 destinations of CX (Cathay Pacific) and 31 destinations of Dragonair,” Luciano said.
“Our countrymen from Northern and Central Luzon, as well as Northern Metro Manila, who are residing or working in the Middle East, the whole of Asia, Europe, America, and as far as Africa can now use Clark Airport for their travel,” he added.
Tourism will get a “tremendous boost” by the entry of the airlines into Clark, according to Luciano.

ANGELES CITY — Mayor Edgardo Pamintuan clarified on Tuesday that the City College of Angeles (CCA) will not be in competition with large private colleges and universities in this city.
Pamintuan said that CCA would be catering only to impoverished students who cannot afford high tuition fees.
The City College will cater to poor students. We are not here to compete with big schools but to provide a chance to those who cannot pay P30,000 or P40,000 to study,” Pamintuan told reporters during his regular breakfast meeting with the local media.
Pamintuan said he has ordered the strict screening of incoming students at the CCA this school year to ensure that the standards set by the City Government are met.
“We are not competing with big schools. That will not happen since our target market are those who really to do not have the means to pay for their studies,” Pamintuan said in response to the worries of school owners here.
In line with this development, the CCA board has successfully established a set of admission guidelines and requirements for aspiring enrollees and transferees.
Freshmen applicants will be required to submit the following: an authenticated F-138 from the school principal, a certificate of good moral character from the school where applicants graduated and a certification of barangay clearance.
For transferees, they will need to submit a certificate of good moral character and honorable dismissal, a photocopy of the transcript of records duly certified by the Office of the Registrar of the transferee’s school and a certification of barangay clearance.
Both freshmen and transferees will have to comply with a Grade Point Average (GPA) of at least 80 percent. If a student, however, has a GPA below 80 percent, he can be admitted, but on a probationary status.
Pamintuan said the CCA will receive a yearly funding from the Office of the City Mayor to ensure sustainability.
Initial courses to be offered by the college include associate degrees in Computer Science, Information Systems and Tourism, which are ladderized programs that can be pursued further in Bachelors’ Degree courses.
They also proposed that the costs of tuition fees will not go over P7,000 with P150 – P170 per unit. This is placed in contrast with private college institutions which tuition fees go as high as P20,000 to P100,000 for more prestigious schools.
But Pamintuan said that even now, he has been subsidizing for the enrollment of students belonging below the poverty line. He added that his administration will also be shouldering the education of dozens of scholars to provide more opportunity for indigent students.

NEW YORK (Reuters) – Greek winemakers are not pricing their wares in drachmas – yet.
The winemakers, visiting New York as part of an international promotional tour, doubted Athens would leave the euro-zone even after Fitch Ratings Agency downgraded Greece’s sovereign debt on Thursday, calling the country’s exit from the monetary union “probable.

“No, no, no. That is not going to happen,” Stellios Boutaris, whose family owns the Kir-Yianni winery, insisted. “And if that happens, we will have bigger problems than just pricing wine in drachmas.”
Boutaris said he was “a guy who always sees the glass half-full…There have been so many journalists coming to talk about Greek wines because they are looking for a positive story about Greece. And right now, it is.”
Attempts in Greece to form a new government collapsed this week, jolting the European single currency on prospects Greek leftists opposed to terms of an EU bailout could win a June election and the country could exit the euro.
The Greek winemakers in New York ranged from big producers to boutique vineyards and one-man shops but all said they wanted Greece to keep the single currency because of the cheaper credit and relative economic stability it brought before the current crisis.
Angelos Iatridis, a University of Bordeaux-trained winemaker who worked harvests in France and Spain before buying his own vineyard, Alpha Estate, in 1999, thought the euro’s hovering near its 2012 low of $1.2623 [ID:nL1E8GHCNN] was actually good for Greek winemakers.
“It’s good for us because we will be able to sell more wine abroad,” Iatridis said, noting that he exports approximately 45 percent of the 300,000 bottles he produces annually.
“The political situation is not stable right now, but I believe in the next election (on June 17) that we will have a much more stable government,” he said.
Credit, or the lack of it during the debt crisis, is a major problem as wine production is a capital intensive business. At any one time, Iatridis has three vintages on his estate in Amyndeon, the country’s northern-most growing region.
“There is no credit. That is why we work very hard going around to promote our wines,” he said, adding that before he was in New York, the New Wines of Greece promotional tour had been to Denver, Chicago, Montreal and Toronto. Next month, while other Greeks are voting, he will be trying to sell his wines in Australia.
Panagiotis Papagiannopoulos, winemaker for the tiny Tetramythos vineyards in the village of Ano Diakopto not far from the Gulf of Corinth, took a long view of the political problems: “We have seen much worse things in the past four or five decades. This is just a blip.”

SONOMA — Increasing sales of wine plus greater demand for direct shipments has fulfillment services provider Wineshipping packing for a major expansion to Napa Valley.
The 14-year-old company is spending millions of dollars on conveyors, warehouse racking and automation to go into a 150,000-square-foot warehouse space in south Napa, according to Rick Moradian, chief executive officer.
“It’s a long-term investment,” he said. “The permutations being demanded from us far exceed the ability for human touch to customize solutions.”
The new location, subleased from Constellation Brands at 80 Technology Court, will have high-tech mechanical devices with sorting logic to maintain a high level of accuracy in putting the right wines are packaged the right way, such as a greeting card inserted, gift wrapping or shipping holds because of weather temperatures or alcoholic-beverage shipping restrictions.
“The contents are expensive and our customers’ clients very discerning, so we want to make sure they are taken care of at a high level of service standards,” Mr. Moradian said.
Automation will allow the company’s current staff of 60 to 100, fluctuating depending on the time of year, to handle many more shipments of orders, samples and club releases. The investment is intended to meet Wineshipping’s projected needs for the next half-dozen years better than the current 78,000-square-foot warehouse at 21481 Eight St. E. in south Sonoma.
And moving such an operation to a new location while not disrupting orders for several hundred customer wineries, marketing agencies and wine clubs has Wineshipping planning a gradual transition over the summer.
Order fulfillment services today need to provide more than just moving boxes from the warehouse to the consumer’s or trade account’s front door, according to Mr. Moradian. Now, there are more demands on how the order is handled and the ability of the fulfillment house to scale up for customers with millions of clients.
There has been a significant shift in wine order fulfillment from the North Coast in the past few years. Large-scale Napa Valley fulfillment house New Vine closed and was acquired by IBG in mid-2009, and Napa-based IBG in September acquired WTN Services and created WineDirect. Sonoma County Vintners Cooperative and Vynapse created Pack N’ Ship Direct in Windsor and have expanded it to Napa, Oregon and the Central Coast. Windsor-based Alexander Valley Cellars created AVC Direct in 2010, and Copper Peak Logistics expanded to American Canyon the same year.
Marty and Alicia Herrick started Wineshipping (707-933-9063, www.wineshipping.com) in 1998. Charlie Baxter bought into the company in 2004 and is now managing member. The company has been a partner with WorldShipNet for a decade and is part of The Network, created by ShipCompliant and MHW.
Three reasons for Wineshipping’s growth has been existing customers are enjoying increasing sales as the economy improves, acquisition of new customers and greater interest in the company’s 4-year-old temperature-controlled delivery service option, according to Mr. Moradian.
The option for keeping wines chilled — or warmed, during winter months — while aboard trucks from Wineshipping’s fulfillment center to the destination has scaled up significantly in recent years, allowing wineries to ship throughout the year. The company contracts to have wine moved in temperature-controlled trailers to courier nodes as close to the destination as possible.
And Wineshipping has been setting up warehouse hubs in key winegrowing regions. In 2008, Wineshipping acquired Vintage Logistics and opened a hub in Santa Maria to serve the Central and South coastal regions of California. Two years later, the company opened an East Coast warehouse in Colonie, N.Y., just outside Albany, to serve customers with imported brands and allow some clients to stage inventory several days closer to key markets.

Santa Barbara County is one of the youngest wine growing regions in California, measured by both vine age and the age and experience of its winemakers.
“wonderboy” Gavin Chanin of Chanin Wine Company
Thus it wasn’t hard for me to sit around a table at the home of Presqu’ile winery owner Matt Murphy with eight winemakers and get a passionate discussion going about that perennial favorite topic in California, alcohol level.
While I can be a provocateur, I wasn’t here; it just came up. The high-alcohol defenders have a chip on their shoulder, perhaps because one of the big men of the area, Jim Clendenen of Au Bon Climat, has been very aggressive at public forums in attacking the style.
I’ll admit that I’m increasingly on Clendenen’s side of the fence. While balance is key, I’d simply rather drink a wine at 13.5% alcohol by volume than 15.5%. But that’s a problem for many vignerons in California because not all grapes in this state will ripen at sugar levels that low.
What made this discussion interesting is that while it was collegial, it brought together proponents of very different styles of wine. Two of the county’s top names in particular are wonderboy Gavin Chanin, 26, named one of Forbes’ top 30 food professionals under 30, and Greg Brewer, who isn’t a senior citizen but was making some of Santa Barbara County’s most exciting wines while Chanin was in elementary school.
Chanin, who runs his own Chanin Wine Company and also assists at Au Bon Climat and Qupe, made me swoon with his Chanin Bien Nacido Vineyard Santa Maria Valley Chardonnay 2009 ($35), one of the best Chardonnays I’ve had this year, and I spent a week in Burgundy. It’s chalky initially and leesy with lime fruit and great texture, as it softens and gets comfortable on the tongue but never gets flabby. It’s not at all lean, yet it’s only 12.8% alcohol.
Chanin shares many philosophies with Brewer: both exalt terroir, treat their grapes gently, and prefer to do as little to the wine as possible. But the results are so different: Brewer’s Chardonnays sometimes top 17% alcohol. I wrote last year about having a problem with that conceptually, which is why he brought a lean, juicy Diatom Hana Shinobu Sta. Rita Hills Chardonnay 2011 ($36) at 13.8% to the table. With its fine texture and strong salinity, this wine would fit in well with the low-alcohol In Pursuit of Balance movement, though the organizers might stop him at the door.
left to right: Cronje, Magdevski, Brewer, Bonnacorsi, Murphy, Schalchin, Chanin, Storm, Law
Other members of the roundtable included:
• Dieter Cronje, winemaker for Presqu’ile, a new winery built by wealthy Hurricane Katrina escapees. Presqu’ile owner Murphy has given Cronje the proverbial unlimited budget but with an unusual-for-the-type mission to make balanced wines that go well with dinner.
• Jenne Bonnacorsi, who came from the high-end restaurant world in Los Angeles to co-found her eponymous winery. She has been making the wines herself since her husband suddenly passed away eight years ago.
• Ernst Storm, a South African (like Cronje) who makes Rhône-style wines for his own eponymous winery and for Curtis (his Curtis Santa Barbara County Mourvedre 2009 [$24] was delicious, fascinating and, at 14.3% alcohol, right in between the battle lines.)
• Curt Schalchin of Sans Liege, representing a countercultural style in the Central Coast best epitomized by Sine Qua Non, but also done successfully by Justin Smith at Saxum: ripe fruit with disregard for “rules.” Schalchin brought a non-vintage Rhône-style white (“Cotes du Coast,” $26) at 14.9% alcohol that I loved despite its weight, and a multi-vintage Syrah-Mourvèdre blend (“The Prophetess” 2009/10) at 15.6% that tasted like roasted fruit.
• Sonja Magdevski, a journalist from Macedonia who is doing all the work for her one-person wine company, Casa Dumetz, which specializes in Viognier. Magdevski lives in Malibu and hates it when people ask her about being married to Emilio Estevez. So I didn’t.
• Apologies to Kevin Law, who makes Pinot Noirs with wonderful texture at his new Luminesce winery that impressed all of us. But Law, whose degree is in meteorology, is soft-spoken and polite and didn’t want to get into this particular discussion.
And now, without further ado, the roundtable:

Cronje, Presqu’ile winemaker: The reason we end up with this low alcohol style is, it’s easiest. Whatever we have to do to not have to touch the wine. If it’s not high pH than I don’t have to worry about it. It’s definitely about low intervention.
Gray: What if you have a hot year in the estate vineyard?
Cronje: We’re not going to water it back. If we have a bad vintage, I wouldn’t mind it showing.
Murphy, Presqu’ile owner: We’re not making Coca-Cola. We’re not homogenizing wine to show no vintage effect at all. I don’t know that there’s a “bad vintage.” 2011 was a difficult vintage, but I’m actually looking forward to the ’11s because it will force people to make more reasonable wines. Reasonable for my palate, anyway.
Bonnacorsi: Nobody’s aging California Pinot for 15 years.
Chanin: I think it represents the vineyard when you don’t have a ton of sweetness. After a year of traveling I noticed ripe wines lose their sense of place anywhere.
Sometimes I think Chardonnay is more telling of terroir than Pinot Noir because you can remove yourself more.
The wines that excite me are high-end wines that don’t cut any corners that are aiming for the very top we can do there.
Storm: I think you can have fruit-driven wines at lower alcohols. But it comes down to choosing your site correctly. My whole goal is to make Rhône varietals in a way that’s balanced and represents Santa Ynez Valley. I don’t think we have the vine age yet where we’re going to make big structure Mourvèdres. Made in a more balanced style, we can see some of the southern Rhône style, where it’s not just about fruit, but there’s also an earthiness and a fungal component. I sometimes get a forest floor, mushroomy note in the Mourvèdre that I like to see.

NAPA — Backed with new funding, VinPerfect is moving into larger-scale production of its design for a screw cap and liner combination that allows winemakers to control oxygen transfer to the wine after the bottle is sealed.
Use of aluminum screw caps has been growing worldwide for ease of use and reuse as well as to allay concerns about closure-related tainting of the wine. But caps can be too good of a seal or not good enough. Cork wood stoppers can allow oxygen through slowly, helping wine to age without oxidizing from too much air in the headspace between liquid and closure or reducing from not enough oxygen. VinPerfect is aiming to provide the best of caps with the best of cork via an aluminum cap with tiny holes in the top together with a multilayer cap liner to control the rate of gas transfer.
VinPerfect plans to license the patent-pending design for the multilayer screw cap liner seal, shown here, and the aluminum screw cap with tiny holes in the top to allow controlled oxygen transfer.
The seven-person company, started in 2008 from a concept developed by three University of California at Davis MBA students, raised $885,000 from 38 seed-round funders in the past 12 months and is accelerating production after the sale of the first closures last fall.
VinPerfect (707-252-2155, www.vinperfect.com) on May 18 doubled the size of its south Napa development, production and distribution facility with a move to nearly 6,000 square feet at 831 Latour Court, Ste. B1. Expected to arrive in July is equipment that will allow the insertion of 10,000 liners an hour, compared with only 1,500 now.
“We’re at the point where we’re getting more orders than we can sustain at this rate of production,” said Collin Casper, co-founder and chief operations officer.
Orders have come from 16 wineries so far, including the 25 Brix brand made by VinPerfect co-inventor and Chief Executive Officer Tim Keller, consulting winemaker for Alta Ridge Vineyards near Sonoma Mountain. Some are buying for entire production runs, and some are acquiring some for testing.
VinPerfect has opened a $1 million series A funding round to cover the increased production, finance inventory to keep up with demand and hire a third production worker and two commissioned salespeople in the next three to six months. Coming on board recently as director of investor relations is Chris Gutek, described as an active angel investor who was involved in Keiretsu Forum’s due diligence on VinPerfect.
While VinPerfect is ramping production in Napa, including a special type of laser etching of the caps based on customer designs. But ultimately, large-scale production must happen elsewhere, according to Mr. Casper. More than 21 billion wine closures are sold globally each year, and screw cap share currently is 15 percent and growing. In the next six months, VinPerfect hopes to secure licensing agreements with aluminum screw cap manufacturers to produce the perforated caps and insert the liners. The company is developing international distribution contracts.
The VinPerfect concept came together in 2007 and won the school’s Big Bang! business plan contest the following year. VinPerfect moved from Davis to Napa in late 2010.

Napa Cabernet is typically our biggest and most pivotal tasting of the year. Our panel considered some 60 wines from the 2009 vintage in a range of prices.
We found wines that exemplified the power of Napa and the freshness and aging potential of great Cabernet. In particular, there was a surge of quality from some of the valley’s most established names. That includes wines like the Robert Mondavi Cabernet, which you might say started it all in Napa’s modern era, and the estate bottle from J. Davies, which is Schramsberg’s line of red wines.
Below are top choices from the panel and other recent tastings, representing a cross-section of Napa’s best from a memorable vintage.
2009 Corison Napa Valley Cabernet Sauvignon ($70, 13.6% alcohol): Here was just the sort of vintage to play to Cathy Corison’s strengths – a year where you could make a taut, ripe wine without a drop of fat. Corison handled it beautifully. Full of mineral power, with pencil lead and chicory, and a tobacco-leaf freshness. Plummy, tight and a bit dusky, a subtly shaded wine with nuance and refinement.
2009 Tor Napa Valley Cabernet Sauvignon ($75, 14.4%): Jeff Ames’ efforts for Tor Kenward’s label again dialed in a hearty but complex style, this time in a blend of its three key vineyard sources: Howell Mountain’s Cimarossa, Yountville’s Mast and Oakville’s To Kalon. Ripe and full of cinnamon spice (a signature of Cimarossa), but the fruit is tense and raspberry-edged, matched by savory sandalwood, mustard seed and currant. A lot in the mix here.
2009 Larkmead Napa Valley Cabernet Sauvignon ($70, 14.5% alcohol): While the estate Cabernet from this wonderfully revived Calistoga property is hardly shy, it’s also a standout example from the vintage. Fresh, mineral-driven and full of dusty plum and mint leaf, the 2009 is classic and surprisingly racy, with a ton of structure but enough graphite and earth that it never feels driven by fruit. A sign of how the older and new Napa styles are being bridged.
2009 J. Davies Estate Diamond Mountain District Cabernet Sauvignon ($80, 14.5%): Schramsberg’s Hugh Davies has been working for years toward a red wine that matches the quality of his sparkling, and in 2009 his Calistoga property, which encompasses some of Napa’s earlier hillside vineyard sites, was fully dialed in. It needs cellar time to shine, but here’s the full power of his site on display – a tightly-wound and savory mouthful: sagebrush, tobacco, mint and black coffee, with dark fruit brooding and a spectacular expression of that loamy Diamond Mountain character.
2009 Round Pond Estate Rutherford Cabernet Sauvignon ($50, 14.5%): The MacDonnell family’s site in the core of Rutherford again yielded a terrific value of a wine (also true of their $30 bottle aged in old wood and using some bought fruit). 2009 was a tighter, more focused effort for Round Pond, but winemaker Brian Brown dialed back the evidence of oak to let clean black cherry, chicory and dust notes shine. It’s still a notably ripe creation, but with great savory touches – dried herb, pencil shaving.
2009 Hess Collection Allomi Napa Valley Cabernet Sauvignon ($28, 14.4%): Hess’ mainline Cabernet is somewhat off-message for Napa these days – sourced from its site near the south end of Howell Mountain, aged in mostly older American oak. And so it’s all the more impressive: Pretty and slightly floral, with a dusky violet side amid the black fruit, plus a welcome cinnamon-candy bite. Its sweetness feels appropriate and just right for the nuanced flavors.
2009 Robert Mondavi Napa Valley Cabernet Sauvignon ($28, 14.5%): The current state of Mondavi finds its strength in the basics, including this found-everywhere bottle that, impressively, includes more than 30 percent fruit from Robert Mondavi’s beloved To Kalon vineyard. A classic, loam-tinged profile, with cassis and black tea and a robust, chewy presence. It’s very much a sum of its parts, but the bones are impressively solid for the price.
2009 Louis M. Martini Napa Valley Cabernet Sauvignon ($30, 14.5%): Full credit to Mike Martini, whose family’s winery now resides under the Gallo umbrella, for again delivering a classically styled, user-friendly Napa Cab at a level (65,200 cases) that leaves most counterparts foundering. It’s not purely classic – that 5 percent Petite Sirah nods at a different set of traditions – but it’s just rich enough, with sweet black cherry, plus espresso accents and a salty side, to show its roots without going to the jammy side.
2009 Napa Cellars Napa Valley Cabernet Sauvignon ($22, 14.1% alcohol): Score one for this long-established name, now part of the Trinchero family’s stable of properties. It’s evidence of how blending from a range of Napa sites can work at a reasonable price, without becoming generic. Full of fun and familiar Napa flavors: a smoky side, with a hint of dried red pepper, brambly fruit and a throat-lozenge glide to the texture.
2009 Terra Valentine Spring Mountain District Cabernet Sauvignon ($45, 14.9%): The Wurtele family’s Spring Mountain property certainly has shown its mettle in recent years, and in this vintage the dense mountain tannins are balanced with great mineral freshness and a warm kirsch-like side. Wonderful savory tones – a meatiness that should mellow with a couple years aging. Sam Baxter’s winemaking continues to frame the great potential of this site.
2009 Antica Napa Valley Cabernet Sauvignon ($55, 14%): Piero Antinori’s rebirth of his Atlas Peak project ( sfg.ly/Jy7278) is coming into its own with this classy, distinctive expression of 2009 that enjoyed an extra year bottle aging. A meaty, earthbound profile – wet clay, copper, cassis and rich raspberry, with clear mineral and tree-bark accents that certainly hint at a mind-set geared toward a more earth-driven style. Polished, but not at the cost of distinction.
2009 Stony Hill Vineyard Napa Valley Cabernet Sauvignon ($60, 13.5%): An unexpected surprise from the McCrea family’s long-established winery, known far more for its white wines. You either take or leave the hard-edged style, with its exposed tannins, but its appealing floral side – sachet, raspberry, bright mineral – shows a different, and delicious, aspect of Napa.
2009 Buehler Estate Napa Valley Cabernet Sauvignon ($36, 14.1%): The Buehler family, and winemaker David Cronin, again succeed in poking at Napa’s high-wire economics with wines that cost perhaps half the going rate, and in 2009 their estate effort, aged in more new French oak, marks a solid step up from the basic Napa bottle. It delivers a wallop of graphite and smoke – think dried cherry and a warm grass fire – and its meaty side is matched by a distinct freshness.
2009 Robert Craig Affinity Napa Valley Cabernet Sauvignon ($50, 14.5%): Craig has long been an expert in the Napa hillsides, but there’s something notably appealing about this blend (Petit Verdot and Merlot make cameos) from the foothills around Mount George in southeast Napa. An enthusiastic dose of oak can’t mask great dried-herb and graphite complexity, or its robust bramble fruit character. Big and dense, with a plushness and tea-like herbal side.
2009 Chappellet Pritchard Hill Napa Valley Cabernet Sauvignon ($135, 15.1%): Even in this cooler year, the Chappellets are unabashed in the style of their top wine. Once again the Pritchard Hill, perched above Lake Hennessey, is a grand snapshot of modern Napa at its best. Big, dense and polished – with a kirsch-like heat but also a lot of mineral power. Graphite, dried leaves, coriander and exotic spice amid deeply extracted black fruit. A classy expression of this site’s extraordinary potential, with a bit of Petit Verdot and Malbec in the mix.
2009 Cameron Hughes Lot 285 Rutherford Cabernet Sauvignon ($24, 14.5%): As always, Hughes’ efforts are catch as catch can, but this recent lot from Rutherford is both plentiful (10,400 cases) and reliable. A surprising lift to the flavors – more red fruit and cassis, with lower tones of ripe blackberry – is matched by a dusty presence and toasted coffee bean. Quintessential Rutherford.
2009 Tudal Estate St. Helena Cabernet Sauvignon ($65, 14.5%): The Tudals’ small St. Helena vineyard yielded a mineral-edged, aromatic effort in this milder year, and winemaker Kirk Venge guided it to something that resembles the Napa Cabernets of 20 years ago, with focus and freshness even in its size. Full of dried thyme and bramble fruit, and densely knit darker flavors for balance.

THE weather won’t matter. Dry and bright would be ideal for stoking the grill, but even muggy heat or dispiriting drizzle won’t stanch the joyous sense of letting go that arrives with Memorial Day weekend.
Aside from the holiday’s ceremonial importance — honoring the men and women who have died serving in the armed forces — the weekend means one thing to most: the unofficial start of summer. As with fashion and food, drinking assumes a more casual, easygoing tone.
Yet the old rules no longer hold. Toss aside the stodgy, outmoded dogma of summer as white-wine season, for one thing. Bourbon need not be consigned to the recesses of the closet in favor of rum and vodka.
For too long, seasonal drinking has been considered a matter of color: reds for the cold; rosés and whites for the heat. Similar rules hold with beer. Friends may gasp as I drink a pint of Guinness in my shorts and sunglasses. They assume dark beers are heavy. But I just smile. Little do they know that Irish stout is crisp, dry and low in alcohol.
It’s not color that guides the choice of warm-weather beverages, but weight. Just as woolens give way to cottons and linens, so do heavier wines, beers and spirits yield to beverages with less ballast. What seems robust and warming in the bleak cold now feels ponderous and unwieldy. By contrast, what felt insubstantial back then is now refreshing and energizing.
Punch, for instance, is often associated with fall and winter holidays. Yet it can be made seasonal with the delicate spring sweetness of strawberries, and summery with the tropical tang of limes. Sure, you could settle for a bland base of vodka, but bourbon adds the perfect backbone of vanilla richness.
Red wines have their place, too. Why would anybody assume that in the heat of summer the desire to drink them simply evaporates? You’re not planning to serve a Sancerre with that porterhouse sizzling on the grill, are you? Of course not. A hefty zinfandel or full-bodied cabernet sauvignon would be too much, but a good Chianti, of medium weight with refreshing acidity is just the thing, especially if you chill it ever so lightly.
Commercially, Memorial Day heralds rosé season, a custom I cannot abide because I like rosé year-round. Great rosés — like those from Château Pradeaux and Domaine Tempier in Bandol; Château Simone in Palette; Valentini in Montepulciano; and my current obsession, Domaine Ilarria in Irouléguy — are as fulfilling in the depths of January as in July’s dank heat.
Not all rosés are as versatile, however. Does anybody really want a heavy rosé in the midday heat or while tending the coals before dinner? I don’t think so. In most rosés, a heavy dose of alcohol or a clumsy level of sweetness will unbalance the wine. The rosés to look for are crisp, textured and refreshing.
From Provence, rosé’s spiritual home, I like Château de Roquefort, Domaine du Jas d’Esclans and Peyrassol. But good rosés come from all over, like Spain, including Campos de Enanzo in Navarra and Los Bermejos in the Canary Islands; Shinn Estate on Long Island; and Arnot-Roberts in California, which makes an unusual but delicious rosé from touriga nacional, a leading port grape growing in Lake County.
They make rosé in Champagne, too, many good ones. But nothing is particularly summery about them, and they are often heavier than the usual bruts.
If you want a great summer bubbly, may I suggest Cerdon du Bugey from Renardat-Fâche? This light-bodied pink sparkling wine has noticeable sweetness, but is beautifully balanced and stimulating as an aperitif or refreshing after dinner.
I mentioned a bourbon, strawberry and lime punch earlier. Made with elderberry tea and Angostura bitters, it is wonderful for a crowd: refreshing, tangy and celebratory. But if you don’t plan a big gathering, simply diminish the proportions in the recipe here. It’s offered occasionally at Prime Meats in Carroll Gardens, Brooklyn, where it was developed by Damon W. Boelte, bar director for the Frankies group of restaurants, who calls it Too Hot to Hoot and describes it as summer in a bowl.
“Bourbon and lime is a rare combination,” he said. “It usually goes with lemon, but with all the other ingredients, they really play well together.”
More often than not, this weekend calls out for a beer or a few. I love the dry, snappy bitterness of a pilsner. Excellent versions are made in New York by Sixpoint and Brooklyn Breweries. Other good pilsners include those from Victory, Lakefront, Tröegs and Pilsner Urquell.
I can’t help but reiterate my love of Kölsch, the crisp, slightly bitter golden ale from Cologne, Germany, which I find so brisk and energizing. The three brands seen regularly are Gaffel, Reissdorf and Sünner, and I find a lot to like about each.
Stout is not the only dark beer appropriate for summer. I especially like porter, too. But thoughts of summer beer would not be complete without a nod to Belgian and Bavarian wheat beers — fresh, spicy and intrinsically refreshing. Look for Belgian styles from Allagash, Hoegaarden, Southampton Publick House and Jolly Pumpkin; among the many producers of Bavarian-style hefeweizen, look for Franziskaner, Schneider Weisse, Brooklyn and Ayinger.
After rosés, most wine drinkers reach reflexively at Memorial Day for whites, as if they’re the equivalent of white belts and shoes: enjoyed for the summer and stowed after Labor Day. I hate to say it, but that thinking is as dated as instant coffee; sure, you’ll have something in your glass, but why deprive yourself of so much pleasure?
I especially like reds that are lightly chilled, not to refrigerator temperature, but just enough to feel cool in the glass. Beaujolais, of course, but also Cerasuolo di Vittoria, the lovely, enticing light red from Sicily. Valle dell’Acate, COS and Occhipinti all make excellent versions. Look also for frappato, one of the constituent grapes of Cerasuolo di Vittoria.
Many other Italian reds go beautifully with a light chill, whether Chianti, barbera, dolcetto, Valpolicella or lesser-known grapes like teroldego from Trentino or cornalin from the Valle d’Aoste. And if you need a full-on refrigerator blast, how about an icy cold Lambrusco from a top producer like Lini, Medici Ermete or Vittorio Graziano?
Or perhaps one of the more restrained pinot noirs from the Sonoma Coast of California? Ross Cobb of Cobb Wines makes excellent pinot noirs that are delightful lightly chilled, particularly those from the Emmaline and Coastlands vineyards. From Spain, try the reds from Ribeira Sacra, a stunning site in eastern Galicia. I especially like D. Ventura and Guímaro wines.
Now, just because I’m touting reds doesn’t mean I’m immune to the charms of summer whites. Far from it. I love a crisp Sancerre, especially those that show the terroir rather than simply the fruitiness of the sauvignon grape. Look for producers like Gérard Boulay, Lucien Crochet, Domaine Vacheron and Thomas-Labaille. Rieslings can be superbly refreshing, whether the light off-dry style of a kabinett riesling from the Mosel; the spätlese-style late-harvest riesling of Hermann J. Wiemer in the Finger Lakes; or the dry mineral flavors of Ravines, a Finger Lakes riesling of a totally different style.
For many people, chardonnay remains synonymous with white wine. Summer or winter, I’ll never say no to Chablis, the most distinctive chardonnay in the world, and out in the Santa Rita Hills of Santa Barbara County, Rajat Parr, the Bay Area sommelier, sells deliciously balanced chardonnays under the Sandhi label.
What, you’ve graduated to pinot grigio? Well, I have nothing against good pinot grigio. (Relegate the insipid ones to the mediocre restaurants of the world.) For good ones, producers like Elena Walch and Alois Lageder of Alto Adige have much to offer.
You know, I’m really just getting started. With any luck, it’ll be a long, hot summer.
